In the first chapter of EMRFD, there is a DC receiver design with an NE602 and LM386.  They have a 1k potentiometer on the antenna input labelled "RF gain."  Does the value of that potentiometer matter?  Could I use a 10k, which I have on hand, or should I get a 1k?

Your right, it's just a voltage divider so put your 1k pot in there. It will work fine. Do not bother trying to over complicate things by adding fixed resistors.
